Loaded Baked Potato & Chicken Casserole

2lbs chicken breast
8 small to medium potatoes
1/3 cup Olive Oil
1 1/2 tsp salt (1/2t)
1t Mrs Dash Garlic & Herb Seasoning Mix
1t Mrs Dash Onion & Herb Seasoning Mix
1 T fresh Ground Pepper (1 1/4 T Coarse Ground Pepper)
1 T Paprika (smokey paprika)
2 T Garlic Powder (1 T)
1 T Onion Powder
1/2 C Onion, chopped
1/2 C Bell Pepper, chopped
6 T Hot Sauce (omitted)

Toppings
2 cups Shredded Cheese (1 1/4 C)
1 cup crumbled Bacon (1/2 lb ground sausage)
1 cup diced Green Onion (3 green onions, use root to tip)

Preheat oven 500° (360°)
In a large bowl mix Olive Oil, Salt, Pepper, Paprika, Garlic Powder, Hot SauceOnion Powder, & Mrs Dash seasoning mixes 
Coat a 9x13 dish with cooking spray
Cube potatoes, add to the bowl.
Toss potatoes in the sauce making sure to cover completely
Put potatoes in the baking dish, be sure to keep excess sauce in the bowl
Bake the potatoes for 45 minutes until almost fork tender, stir every 15-20 minutes
Cube the chicken & add it to the bowl with the left over sauce (marinate about 30 minutes)
In a skillet brown the ground sausage, drain meat, let cool, crumble into small pieces
In the same skillet heat 1-2T olive oil, sauté chicken, onion, and peppers

Mix together cheese, bacon ground sausage & green onion in a small separate bowl
Once potatoes are done, add the uncooked marinated chicken add the sauteed chicken and vegetables

Layer the toppings over the chicken

Bake for 15 minutes or until the chicken is cooked
