Saucy Pork Chops

6 pork chops, trimmed of fat (3-4)
1 cup chopped onions
½ cup ketchup
¼ cup packed brown sugar
3 tablespoons white vinegar (apple cider vinegar)
1 tablespoon soy sauce
½ teaspoon salt (omitted)
¼ teaspoon pepper
1 tablespoon Tony Chachere's Salt-Free Cajun Seasoning
1/2 tablespoon A-1 Garlic & Classic Herb Dry Rub
1/2 teaspoon Cumin 

Heat oven to 350 degrees.
Season chops with Tony Chachere's, A-1 Rub, & Cumin 
Brown pork chops in a skillet on medium high heat * and then transfer to a roasting pan. (leave in skillet, reduce to low heat*)
Scatter onion over pork chops. (Mix onions in with other ingredients)
Mix remaining 6 ingredients together and pour over pork chops and onion.
Cover. (Leave cover slightly ajar for first 30 minutes)
Bake for about 1 hour or until meat is tender.
